Roasted Tomato Soup

Delicious tomato soup made with garden fresh tomatoes.

Ingredients

  • 5 tomatoes, assorted sizes and types, sliced thin
  • Extra Virgin Olive Oil
  • Salt & Pepper
  • 2 cups chicken stock
  • 2 garlic cloves
  • Basil leaves
  • John Wm. Macy’s CheeseSticks

Instructions

  • Roast tomatoes for 25 minutes at 350 degrees.
  • Let tomatoes cool and puree in a blender.
  • Add chicken stock and garlic cloves.
  • Heat tomato soup in a stockpot until heated through.

Serve with John Wm. Macy’s CheeseSticks
