The weather is getting crisp. And we are all craving comfort food. You cannot get more comfort than warm, cheesy and oh so yummy Mac and Cheese.

Homemade Mac and cheese recipe
Ingredients
- 1 1/4 cups dry elbow macaroni
- 2 Tablespoon butter
- 1 – 2 Tablespoons all-purpose flour
- One can evaporated milk
- 1 Tablespoon finely minced onion
- 2 cloves finely minced garlic
- 2 teaspoons fresh-ground black pepper
- 1 teaspoon sea salt
- 2 teaspoons yellow mustard (optional)
- 2 cups sharp cheddar cheese
- Corn flake crumbs (for topping)
- 1 teaspoons onion powder (if you do not use fresh onion)
- 1 teaspoons garlic powder (or if you do not use fresh garlic)
Instructions
Pre-heat the oven to 375 degrees. In a pot of boiling, salted water cook macaroni for about 9 minutes. It will still be very al dente but will finish cooking in the oven later.
In a large pot, melt the butter over medium-low heat. Add flour little by little and stir constantly, until flour has dissolved. Next, add evaporated milk. Stir constantly for about 2 minutes.
Add salt and pepper. If you are using fresh onion and garlic, add that. If not, add onion powder and garlic powder. Next, add mustard. Stir to fully combine.
Now add cheese. Stir slowly until cheese is fully melted. Continue stirring slowly and constantly for another 3-4 minutes, until cheese sauce has a rich consistency. You don’t want a watery sauce, or it won’t bake properly. The sauce should be thick enough that it stays on the back of a spoon.
Drain macaroni, and add to cheese sauce. Mix completely.
Bake the Mac and cheese
Spray a baking dish with cooking spray. Add the macaroni and cheese sauce. Sprinkle with corn flake crumbs. If desired, top with a few small pats of butter. Bake the Mack and cheese for about 30 minutes, or until the sauce is set. Remove from oven, and allow it to cool for about 5 minutes. Enjoy!
