Season both sides of pork chops with salt & pepper. Smear roasted garlic on both sides of pork chops. Let sit for 15 minutes.
Heat grill to medium heat. Spray grates with non-stick spray, so the pork doesn’t stick.
In skillet over medium heat, add butter. When butter melts, add pork chops. Sear pork chops for about 2 minutes per side.
Transfer pork chops to grill. I put the chops over direct flame. Close cover, and allow to grill for 5 minutes. Next, flip chops, and allow to grill for another 5 minutes .
While pork chops grill, add honey and fig spread to microwave-safe bowl, and microwave for 15-20 seconds, or until fig spread mixes easily. Combine well. Don’t warm mix too far ahead, or it will get thick again.
Now, spread the glaze onto pork chops, and grill for 3 minutes. Flip chops, spread glaze on other side, and grill for another 2-3 minutes.
