This week we are featuring a recipe by guest blogger Karyl at Karyl’s Kulinary Krusade. Just look at the photo and tell me your mouth isn’t watering! These garlic lemon butter scallops are so sinfully delicious that you won’t be able help yourself.
I’ve had scallops in the past and sometimes they can be bland. Not these garlic lemon butter scallops, however, they are so very tasty you will want to make them again and again.
And these scallops make a great appetizer for parties and events. So you can just sit back and enjoy the many complements.
Garlic lemon butter scallops
Ingredients
- 12 sea scallops
- 3 Tablespoons butter
- 4 cloves garlic, minced
- 2 teaspoons red pepper flakes (or more, to taste)
- 1 lemon (you will use juice and zest)
- Salt & freshly ground pepper, to taste
- Parsley, for garnish
Instructions
Pat scallops with paper towels to try. Season both flat sides with salt and pepper.
In large skillet over medium heat, melt butter. Add juice of lemon.
Next, add 1-teaspoon red pepper flakes and minced garlic, and cook for 2 minutes, until garlic is fragrant.
Add scallops to skillet. Keep an eye on scallops, but don’t move them! Check after 2-3 minutes. When you see the bottom edge beginning to caramelize, carefully turn scallops over. Cook on other side for another 2-3 minutes, until bottom is caramel color.
Remove scallops from skillet, and drain slightly on paper towels Add remaining red pepper flakes, drizzle with garlic lemon butter, and top with parsley and lemon zest. Enjoy!
