This week we are featuring a recipe from one of our favorite guest bloggers, Karyl at Karyl’s Kulinary Krusade. Karyl tells us her easy recipe for Shrimp fried rice is healthier and even tastier than take out fried rice. She makes hers with shrimp but you can easily substitute another form of protein.

Mix seasoning blend, and set aside.
Run a sharp knife down the back of each shrimp to butterfly, then add 1 teaspoon of seasoning to shrimp and set aside.
Melt one-tablespoon margarine in large skillet. Using a knife, cut corn kernels off the corncob. Add the carrots, celery, onion and corn, and sauté until soft. Add peas and garlic, and sauté for about 2 minutes. Now remove from the stove and set aside.
Wipe skillet clean. Next add 1/2 teaspoon of the seasoning to the eggs. Melt 1/2 Tablespoon margarine in skillet. Add the beaten eggs and scramble. Next, remove the eggs and set aside.
Return vegetables to pan, add rice. Add soy sauce, oyster sauce, fresh ginger and remaining seasoning. Stir regularly, until sauce is fully combined and rice is warm.
In separate pan, melt one Tablespoon margarine and add 1/2 Tablespoon of olive oil over medium-high heat. When margarine is melted, add shrimp in a single layer. Cook shrimp approximately 3 minutes on each side. Shrimp will overcook very quickly, so keep an eye on it! Remove shrimp, and add to skillet with fried rice. Combine all ingredients. To finish top with the spring onions, and serve.
