Honey lime shrimp and vegetables recipe

Ingredients
- 1 pound large/x large shrimp, peeled and deveined (I use 21-26)
- 1/2 cup dry long-grain white rice
- 1 Tablespoon margarine (I use Smart Balace)
- 1/4 cup diced celery
- 1/4 cup diced carrots
- 1/4 cup diced onions
- 2 garlic cloves, minced
- Your choice of vegetables, cut into bite-sized pieces (I use asparagus, green beans, snap peas, mushrooms, zucchini)
- Marinade
- 1/4 cup olive oil
- 2 T honey
- juice of one lime
- zest of one lime
- 4 cloves garlic, smashed
- 1 tsp salt
- 1/2 tsp black pepper
- 1/2 tsp red pepper flakes

Instructions
- Combine marinade ingredients, and pour over shrimp in sealable container (Ziploc bag, Tupperware, etc.)
- Marinade in fridge for at least 30 minutes, up to 4 hours
- Remove shrimp from fridge, and let sit for 10 minutes
- Cook rice, according to package directions
- In large skillet over medium heat, melt margarine
- Add celery, carrots, onions and garlic, and sauté until soft, about 5-7 minutes
- Add sturdiest vegetables first (zucchini, green beans), and sauté for 5 minutes
- In small saucepan, add marinade and cook over medium-low heat until marinade reduces slightly
- Add remaining vegetables to skillet, and sauté for 5 minutes
- Move vegetables to edge of skillet
- Add shrimp, cook 1-2 minutes per side, until shrimp is pink
- Combine shrimp and vegetables, pour marinade, combine fully
- Sever shrimp and vegetables over rice
