With the warm summer weather upon us, I love to find new ways to enjoy our meals without having to turn the oven on, but still packing a punch with lots of flavor.
My favorite thing to do is cook a whole chicken in the crock pot and then I have chicken cooked all week long to enjoy on sandwiches and in dinners. Our favorite meal right now is this Artisan Chicken Sandwich with Peppadew Peppers.
This ends up being a very easy meal with a whole lot of flavor thanks to these delicious Peppadew®mild whole piquanté peppers.
Since there is no cooking involved, the Artisan Chicken Sandwich with Peppadew Peppers is very easy to put together.
On a Kaiser roll or on a piece of French or Italian bread with mayonnaise layer:
Pieces of white meat chicken
Mozzarella cheese
2-3 slices of thin prosciutto
Lettuce, tomato
3-4 Peppadew®mild whole piquanté peppers
Finish with a Drizzle of oil, Red Wine Vinegar and a little bit of the Peppadew brine
