If you want a light meal that is filling, healthy, and most of all, delicious then Blackened Salmon BLT Salad is for you! Karyl from Karyl’s Kulinary Krusade created this tasty dish that your whole family will love.
It’s difficult to cook a salmon filet evenly because most pieces aren’t uniform throughout. Karyl solved this problem by cutting the salmon into two-inch chunks before cooking.
She adds roasted tomatoes, avocado, bacon and a drizzle of balsamic vinegar to make this dish a delicious bonanza of flavor!
Blackened salmon BLT salad
Ingredients
12 ounces Atlantic salmon
2 cups red leaf lettuce, shredded or chopped into thin strips
15 grape tomatoes
Salt & pepper
Olive oil, for roasting
4 slices bacon
1/2 avocado, pitted, peeled and diced
1/2 cup red onion, diced
1 Tbsp high quality balsamic vinegar
Blackening Seasoning
2 Tbsp all-purpose flour
2 1/2 tsp chili powder
1 tsp paprika
1 tsp packed brown sugar
1 tsp onion powder
1/2 tsp garlic powder
1/2 tsp cumin
1/2 tsp cayenne pepper (optional)
1/2 tsp salt
1/4 tsp freshly ground black pepper
Instructions
Preheat oven to 400 degrees
Cut salmon into 2″ chunks
Combine seasoning ingredients into bowl
Toss salmon in olive oil, and toss salmon in seasoning mix until completely coated. Set aside
Cut tomatoes in half lengthwise. Toss with salt, pepper, and olive oil. Roast on foil-lined sheet pan for 20 minutes
Cook bacon over medium heat in large skillet. Drain on paper towels. Crumble or chop into small pieces
Turn heat to medium-high. Add salmon chunks and cook until browned. Drain on paper towels
Combine lettuce, tomato, avocado and onion in large bowl. Add bacon and salmon
Drizzle with balsamic vinegar
Divide into bowls, and serve.
